During our first few months in Africa, our friend M taught us how to fry. Since then, we have been making delicious tortilla chips and french fries on a semi-regular basis. Now that M has been back visiting for a few weeks, he has stepped it up a notch with what I'll call Frying 102- Batter!

| Pre-fry: Batter and par-boiled french-fry potatoes, sliced potatoes, and some pumpkin |
 |
| relatively healthy-looking, right? |
 |
| We were introduced to the wonderful world of Potato Cakes- deep fried, battered potato slices that are, apparently, quite popular at fish and chip places in Australia. Now we have one more good reason to visit Australia some day. |

| We were feeling a bit unhealthy, so we fried up some green beans, too (bottom right). They weren't quite as good as the Virginia Mason cafeteria's fried green beans, needed a little more flavor in the batter. Or perhaps I had just eaten too much fried food at that point to appreciate them! |

Oohhh, fried green beans. They look yummy! Is ketchup an impossibility there? When I was last in Tanzania we had only fancy catsup that just wasn't quite the same.
we can get ketchup at the little store on the compound...its ok, not quite like American ketchup. We like to mix up ranch dressing to dip things in!
