What do you cook with pumpkin?

This time of year, usually pumpkin pie.  We went to the market yesterday (a fun experience we'll have to tell you about later) and bought a bunch of vegetables, eggs, rice, etc.

Our first trip to the market. The cut up orange fruit (?vegetable) is pumpkin. The whole lot was just under 5,000 cfa (about $10)
We've been blessed to have our new neighbor, R, cook meals for us for the last two days. Today, we were on our own. Its not that tricky, but some things are different. For example, they don't sell pre-made salad dressing here, so we made our own from oil and spices. And, the vegetables have to be bleached, peeled, or cooked thoroughly before eating (the cut pumpkin had flies all over it at the market). This is what we came up with:

Green salad & rice with stir-fried pumpkin, tomato, garlic, and onion. It was pretty good!
Now, its time to boil some water so we can wash dishes.
